Maybe the start of a new tradition.

A few hours later the credits ofElfare rolling. Anders and Leo are laying on one couch, with John sitting on the floor in front of them surrounded by about half a dozen empty beer bottles. I look down at Hughie, who is sandwiched between Niall and I. He’s passed out with his head lolled on my shoulder. I look over at Niall, who has a grin on his face.

I reach out and take his hand, thinking about how lonely this day could have been. And how it’s been so much better than I ever could have expected.

Apple Pie Cookies

A unique take on a classic pie.

Ingredients

2 cups (256g) all-purpose flour

1 tsp baking soda

2 tsp cream of tartar

1 tsp salt

¾ tsp cinnamon

2 cups diced dried apples

1 cup (2 sticks) unsalted butter, browned and cooled

½ cup (100g) light brown sugar, packed

1 cup (200g) granulated sugar

2 tsp pure vanilla extract

2 large eggs, room temperature

2.5 cups (250g) old-fashioned rolled oats

½ - 1 cup butterscotch chips or salted caramel chips

(optional) ¾ cup walnuts or pecans, finely diced

Make brown butter with the two sticks. Melt over medium heat, stirring frequently until the butter foams and brown specks form (5-10 minutes). Butter will havea nutty aroma. Immediately remove from heat and pour into a bowl. Allow to fully cool before making the cookie dough.

In stand mixer, cream sugar and butter on medium speed until light and fluffy (4-5 minutes).

Add one egg, beat for a minute. Add second egg, followed by vanilla extract. Scrape the bowl down as needed.

In a separate bowl, whisk together the cream of tartar, baking soda, salt, oats, flour, and cinnamon.

Add the dry ingredients all at once, mixing on low.

Once combined, stir in the dried apples, butterscotch chips, and nuts (if using). Remove bowl, cover in cling wrap, and refrigerate for at least one hour.
